Chewy Chocolate Chip Cookies

I started having dreams about these cookies a few days after I first tasted them at a school event. Then I made them for my best friend and she started dreaming about them too!

The secret is that each cookie is actually two cookies stacked on top of each other. You heard me, right. You put a cookie scoop of the dough on the cookie sheet, then you take another scoop and slap it right on top of the first scoop. Press down a little bit and Oh. My. Goodness. So decadent. So good you’ll dream about them for days afterward.

CHEWY CHOCOLATE CHIP COOKIES

Ingredients

2 1/2 cups flour

1 tsp baking powder

1 tsp baking soda

1 3.4 oz box Jello brand vanilla pudding (not “cook and serve”)

3/4 tsp salt

1 cup salted butter, softened

3/4 cup sugar

3/4 cup brown sugar

2 eggs

1 1/2 tsp vanilla extract

1 cup semi-sweet chocolate chips

Instructions

Preheat oven to 375 degrees.

Combine flour, baking powder, baking soda, pudding mix and salt in a medium bowl.

In a large bowl, beat butter and both sugars until smooth.

Add the eggs and vanilla and beat until smooth.

Add the dry ingredients to the wet mixture in small batches, beating to combine.

Mix in the chocolate chips with a spatula.

Use a small cookie scoop to place one scoop on a baking sheet. Take another scoop of the dough and place it on top of the first scoop, pressing down just a bit.

Bake for 10-12 minutes or until the top and edges are just starting to brown. Be sure not to over bake. You don’t want them browned, just lightly toasty.
